Vegan Banana Bread

INGREDIENTS:
3.5 fl oz Crackd® The No-Egg Egg®
3.5 oz vegan butter, softened
4.4 oz caster sugar
8 oz self raising flour
1.5 fl oz plant based milk
1 oz potato starch
2 ripe bananas mashed
1½ teaspoon baking powder
1 teaspoon glycerine
1 teaspoon vanilla extract
1 tablespoon lemon juice
¼ teaspoon salt
METHOD:
Preheat the oven to 300F
Mix the sugar, butter and banana and whisk until creamy and fully combined.
In a separate bowl, whiskCrackd® The No-Egg Egg®,plant milk, vanilla extract,glycerine and lemon juice until frothy.
PourCrackd® The No-Egg Egg®mixture into the sugar, butter and whisk well.
Sieve the flour, potato starch, salt and baking powder into the other ingredients and whisk until all ingredients fully blended and the mixture is smooth.
Line a 2lb loaf tin with greaseproof paper and pour the mixture into the tin.
Place in the centre of the oven and cook for 45 minutes to an 1 hour until golden brown. Test if the bread is cooked by inserting a metal skewer into the bread, if it comes out clean it’s ready if not return to the oven and test again.
Once the bread is cooked remove from the oven and allow to cool before removing from the tin.
