Vegan Scramble and Avocado

INGREDIENTS:

  • 240g Crackd® The No-Egg-Egg®
  • 2 toasted slices of bread
  • 1 large ripe avocado sliced
  • 1 tablespoon vegetable oil
  • 1 roasted red pepper sliced
  • 1 tablespoon vegan green pesto
  • 2 spring onions chopped

METHOD:

    • Place the oil in a non-stick frying pan on a high heat.
    • Pour Crackd® The No-Egg-Egg® into the pan, it should start to set on the bottom straight away.
    • With a non metallic spatula start to draw the mixture turning it as you go.
    • When the mix starts to coagulate keep stirring, Crackd likes to be scrambled at a high heat.
    • Vegan egg takes longer to cook than real egg and although it may look ready usually requires around 2-3 minutes minutes until really firm.
  1. Remove from the heat and season to taste and place onto the toasted bread.
  2. Then add the sliced avocado and top with sliced roast red peppers
  3. Season with salt, pepper, a drizzle of vegan pesto and sprinkle with chopped spring onions.
