Crackd® The No-Egg-Egg® Bites

INGREDIENTS:
250g Crackd® The No-Egg-Egg®
25g vegan bacon lardons
25g vegan grated cheese
20g chopped fresh tomato
20g chopped spring onion
20g sliced black olives (optional)
1 tablespoon cornflour
1 teaspoon chopped parsley
½ tsp thyme
½ teaspoon salt
¼ teaspoon pepper
METHOD:
Preheat the oven to 150C gas mark 2 (130C Fan).
Lightly grease a non-stick small muffin tray.
Whisk the Crackd® The No-Egg-Egg® with the cornflour until light and frothy.
Add all the other ingredients into the mixture whilst keeping back some of the grated cheese and stir in well until fully combined.
Spoon the mixture equally into the muffin tray.
Sprinkle a little of the remaining cheese onto the bites.
Place the tray into the pre-heated oven for 20-30 minutes or until fully cooked. Test if the bites are cooked by inserting a metal skewer into the bites, if it comes out clean it’s ready if not return to the oven and test again.
Serve straight away with a side of salad or on its own as a snack.
