INDIAN BHURJI SCRAMBLE

INGREDIENTS:
1 Tbsp Vegetable Ghee or Vegetable Oil
1 Medium Onion, chopped finely
2 Medium Tomatoes, chopped finely
2 Spring Onions, chopped
1 Fresh Green Chilli Pepper cut lengthways, remove seeds for a milder heat then finely slice
1 Tsp Garlic Paste
½ Tsp Ginger Paste
½ Tsp turmeric powder
¼ to ½ Tsp Red Chilli Powder (depending on how hot you like it)
½ tsp Garam Masala
180ml

½ Tsp salt
To Serve:
Roti or Paratha
Fresh Coriander
METHOD:
In a non stick frying pan place the ghee/oil and onions and tomatoes, fry gently until soft and moisture has evaporated. (About 3 minutes).
Add the green chilli and garlic and ginger pastes and continue to sauté for another minute.
Reduce the heat to low, add the turmeric, chilli powder, garam masala and stir until completely blended in.
Pour in
Crackd® The No-Egg-Egg®
and salt and continue to stir until the no egg-egg is cooked about 5-7 minutes.
Add the chopped spring onion and if desired the peas and paneer.
Serve on a warm roti or paratha sprinkled with chopped fresh coriander.
