Vegan Banana Bread

INGREDIENTS:
100g Crackd® The No-Egg Egg®
100g vegan butter, softened
125g caster sugar
230g self raising flour
40ml plant based milk
20g potato starch
2 ripe bananas mashed
1½ teaspoon baking powder
1 teaspoon glycerine
1 teaspoon vanilla extract
1 tablespoon lemon juice
¼ teaspoon salt
METHOD:
Preheat the oven to 170C gas mark 3 / 150C Fan.
Mix the sugar, butter and banana and whisk until creamy and fully combined.
In a separate bowl, whisk Crackd® The No-Egg Egg®, plant milk, vanilla extract,glycerine and lemon juice until frothy.
Pour Crackd® The No-Egg Egg® mixture into the sugar, butter and whisk well.
Sieve the flour, potato starch, salt and baking powder into the other ingredients and whisk until all ingredients fully blended and the mixture is smooth.
Line a 900g loaf tin with greaseproof paper and pour the mixture into the tin.
Place in the centre of the oven and cook for 45 minutes to an 1 hour until golden brown. Test if the bread is cooked by inserting a metal skewer into the bread, if it comes out clean it’s ready if not return to the oven and test again.
Once the bread is cooked remove from the oven and allow to cool before removing from the tin.
