Cheese and Broccoli Muffins

INGREDIENTS:
60g
Crackd® The No-Egg-Egg®
275g self-raising flour
250ml plant milk
200g cooked grated broccoli
75g grated vegan cheese
50g melted vegan butter
4g mixed herbs
1 tbsp juice
1 teaspoon baking powder
½ tablespoon salt
¼ teaspoon pepper
METHOD:
Preheat the oven to 180C gas mark 4 /160C Fan and line a 12 hole muffin tray with muffin cases.
Sieve the flour, baking powder and salt and pepper into a large bowl.
Mix the butter,

, lemon juice and milk together in a jug.
Add the cheese and mixed herbs into the bowl of dry ingredients and mix well.
Pour the wet ingredients into the bowl and gently stir everything together using a fork.
Divide the mixture equally between the cases and bake in the oven for 25-30 minutes until lightly golden and until the muffins rise.
Remove from the oven and allow to cool. Serve warm or cold.
